Ashley posted about this recipe yesterday and immediately after work I stopped to pick up the supplies. The recipe is exciting for a couple reasons -
1. It's a healthy chocolate dessert.
2. It's vegan.
Although I am not vegan, I feel so much better making things Chris can eat too. I guess I feel less guilty, because really, who wants to watch someone eat dessert when they can't have any. I'm sure Chris would tell you he doesn't care (or even notice sometimes), but I feel bad.
Anyway, I actually read her blog post while I was eating a very delicious avocado, provolone and sprouts sandwich. It was fate.
So, the recipe is originally from this food blog, but I modified it a bit.
Chocolate Avocado Mousse
Serves 2-42 avocados, seeeded and chopped, peels discarded
1/3 cups cocoa powder
1/3 cup organic cane sugar
1 tablespoon vanilla extract
1/4 teaspoon cinnamon
good pinch chipotle powder
Place all the ingredients in a mixer and puree for 3 minutes until smooth. Taste and adjust agave and spices as desired.
It turned out to be tasty, but next time I will be adding some more chocolate! Chris didn't love it, but he isn't a chocolate fiend like myself.
Never in my life would I have thought chocolate and avocado would go together... and yet, I'm oddly intrigued...
